If you hated Brussel sprouts as a child, this is the recipe that will convert you into a fan. A quick dose of steam removes any bitterness from the leaves before being fried with bacon for a crispy exterior and tender middle.
1 pound Brussel sprouts (about 24)
1 tablespoon oil
3 strips of bacon
- Wash Brussel sprouts, removing any brown outer leaves.
- Fill a large saucepan with 1 inch of water. Bring to a boil and add Brussel sprouts, covering with a lid. Cook for 4 minutes and immediately pour into a strainer and run under cold water for 1 minute.
- In a large frying pan, heat oil over high heat. Cut bacon with sharp kitchen scissors over the pan so that thin strips fall directly into the hot oil. Cook until opaque and starting to crisp, about 2 minutes. Add Brussel sprouts and cook for another 3-4 minutes, stirring occasionally, until they begin to brown and bacon is crispy.
- Line a plate with a paper towel and transfer sprouts to the plate to drain some of the fat. Serve immediately.
