This colourful cake incorporates the distinctive tangy, fruity flavour of Sour Patch Kids by

melting them down to make a flavourful syrup which is then folded into buttercream to sandwich

between layers of cake and also uses frosting. The cake is then drizzled with a Sour Patch

Kids drip and topped with piped rosettes of Sour Patch Kids buttercream. Yum

Bake your cake. I'm using a quarter sheet cake to cut into square layers to make a square

cake but a round cake would definitely work. Divide the layers in half if they're too thick

or if you just want more layers. I'm using vanilla so the flavour of the Sour Patch Kids

will be really noticeable but chocolate or lemon could be nice too

I'm making a five layer cake with four layers of filling. Before you continue, decide how

many layers you're going to have because that will show you how many layers of filling and

how many colours of Sour Patch Kids you'll need. It's time to melt your candy! Mix 20 Sour Patch Kids of the same colour with a third

of a cup of water and cook over a low heat for 15 minutes, stirring occasionally. You

can do this in the microwave instead for 30 seconds at a time, stirring and then heating

it for another 30 seconds and it'll take about 4 minutes in total. Set aside 12 Sour Patch

Kids of a variety of colours to use later. After 15 minutes, you'll have a few stubborn

pieces of candy floating in the melted Sour Patch Kids syrup. Pour it all through a sieve

pushing it through with a spoon or a spatula and scraping the syrup that clings onto the

outside of the sieve. Repeat with the other colours of Sour Patch Kids. Whip up a batch

of buttercream and set aside half. Divide the rest into as many bowls as you're going

to have fillings. You'll have about one cup of frosting for each bowl. Mix one tablespoon

of Sour Patch syrup with each bowl of frosting. I'm going to have 4 fillings so here are my

4 bowls of frosting. You can add a few drops of gel food colouring to each bowl if you

want the colours to be a bit brighter. Now we're going to build the cake! I'm using

a square cardboard cake board as my base and securing it to my turntable with masking tape

Use a dollop of buttercream to attach your first layer of cake and then spread on your

first colour of filling. I'm using an offset spatula to spread it up to the edges, lifting

Now we're going to crumb coat the cake with a thin layer of buttercream frosting. Again

this is easier with a chilled cake so it doesn't crumble. Use an offset spatula to apply the

frosting and then a frosting scraper to smooth it. Keep it thin so you can see the layers

of cake and filling underneath the frosting. If you're doing a square cake, it's easiest

to run the frosting scraper from the edge to the middle and then from the opposite edge

so it's the same size as your cake. Chill the cake to set the crumb coat and now we're

going to apply the final coat. Put your leftover white and coloured Sour Patch Kids frosting

into piping bags without tips. Pipe a ring of white frosting around the base of the cake

covering up where the first layer of cake is. Then use your first filling colour and

pipe over where the filling of the cake is. Continue with white frosting where the cake

is and coloured frosting where the filling is, finishing with white over the top of the

cake. Now use your frosting scraper to smooth the frosting, saving the frosting you scrape

off. Put the cake on the turntable in the fridge to set the frosting. Put your scraped

off frosting into a piping bag fitted with a star tip. I'm using a 1M tip but any star

or open star tip will work. Take your cake out of the fridge and use your offset spatula

to lift it off the turntable and put it on a plate or platter or a bigger cake board

Next put the rest of your Sour Patch Kids syrup into little ziplock bags. If the syrup

has set, heat it in the microwave for about 10 seconds to loosen it up. Sniff off a little

piece of a corner of each ziplock bag and then hold one of the bags against the edge

of the top of the cake. Squeeze out the syrup and move the bag along the edge of the cake

creating a drip effect. Switch out the bags to use all of the syrups for the drip. The

Use your bag of multicoloured frosting to pipe rosettes around the top of the cake

Place a Sour Patch Kid on top of each one for decoration. Then squeeze the rest of the
