I warmed the cream in a saucepan on the stove until small bubbles appeared around the edges. Then I removed the pan from the heat and added the chocolate, stirring it quickly to cover the chocolate with cream. I left it for 5 minutes and then stirred it until all of the chocolate had melted. Then I added a few drops (probably 5) of black gel food colouring. I waited until the ganache came to room temperature before frosting the cake.
